What else to do on a rainy weekend?


It's Spring down under and the weather is completely unpredictable. After a rather dry Winter and early Spring, we seem to be catching up with the rain now. I don't think it could get any wetter than this.

So instead of a lovely Spring weekend outside, we've stayed indoors baking cookies. These were the perfect snack for a lazy afternoon, watching old movies on the couch.


I found this recipe on Pinterest and I wasn't disappointed. I can probably say this was the best sugar cookie recipe I've ever tried (not that I've made that many before though..).
I've used a small star shaped cookie cutter and decorated the cute little stars with melted chocolate, just to make them a tad sweeter.
And you know what? They even tasted better the next day! Yum!


Rolled Sugar Cookies By Glorious Treats

Ingredients
- 3 cups flour
- 1 TSP baking powder
- 1 cup unsalted butter
- 1 cup sugar
- 1 large egg
- 1 TSP vanilla extract

Instructions
1. In a separate bowl whisk together flour and baking powder.
2. Beat together unsalted butter and sugar. Once mixed well, add in egg. Mix again, then add in vanilla.
3. Slowly add in flour mixture about a cup at a time. Mix until dough forms and begins to clump together.
4. Gather up dough and knead it with hands until it's nice and smooth. Roll it into a ball, wrap with plastic wrap, and place in fridge to chill (20-40 minutes). You will want it to be kind of firm but not hard.
5. Bake at 180º, time will depend on cookies size and thickness. Normally between 7-11 minutes.
